Healthy Waffles with 3 Ingredient Coconut Syrup

We love these easy-to-make waffles made with smoothie ingredients: a smoothie in waffle form! These waffles are hearty and filling, yet light and tasty all at the same time. Ingredients

For the Waffles
  • 1/3 cup Almond Protein Powder
  • 1 Banana
  • 1/2 cup Rolled Oats or Gluten Free Rolled Oats
  • 2 Eggs large
  • 1/3 cup Coconut Milk
  • Coconut Oil for greasing your waffle iron
  • 1 1/2 tsp Honey (or sweetener of choice)
  • 1/4 tsp Vanilla Extract
For the Syrup
  • 1/2 cup Raw Honey
  • 1/4 cup Coconut Milk
  • 1 tsp Vanilla Extract

Instructions

For the Waffles
  1. Slice and mash your banana (slicing it first will make it easier to mash).
  2. Place mashed banana in a bowl with the other ingredients and whisk together until well blended.
  3. Grease your waffle iron with coconut oil and preheat for at least 10 minutes, then place approximately 2/3 cup (more or less, depending on the size of your waffle iron) of the waffle mix into the waffle iron.
  4. Cook according to your waffle maker instructions.
For the Syrup
  1. In a saucepan, whisk all three ingredients together over low heat. Stir continuously until completely blended and syrup has begun to simmer slightly. Serve over warm waffles and toppings of your choice.
