A tasty twist on pancakes, these light and fluffy cornmeal hoecakes are gluten free and easy to make. This recipe was not tested by Bob's Red Mill. Gluten Free, Low Cal, Low Sugar.
In medium mixing bowl, whisk dry ingredients together. Add wet ingredients and mix well until there are no lumps. Add a little more milk if batter appears to be too thick.
Using 1/4 cup measure, drop onto medium-hot greased or non-stick griddle. Cook 1-2 minutes per side or until golden in color.
