Ingredients

  • 2 Eggs large
  • 1 cup Buttermilk cold
  • 3 cups Whole Wheat Pastry Flour
  • 2 Tbsp Baking Powder
  • 1 tsp Salt
  • 10 ounces Unsalted Butter cold, grated using a box grater

Instructions

  1. Preheat the oven to 375° F.
  2. In a medium size bowl whisk together the eggs and buttermilk until combined and set aside.
  3. In a separate large size bowl mix together the flour, baking powder, salt and grated butter until combined, and then form a well.
  4. Pour the egg and buttermilk mixture into the center of the well and then mix with a spoon until combined to form a dough.
  5. Transfer the dough to a clean surface and mold it to form a circle that is about 1 ½ to 2 inches thick.
  6. Use a circle cookie cutter to cut out the biscuits and place them on a sheet tray lined with parchment paper. Continue reforming the dough to make additional biscuits until you have 9 total biscuits.
  7. Bake at 375° F for 18 to 20 minutes or until lightly browned on top and cooked in the center.
  8. Serve hot and enjoy!
