Ingredients

  • 2 cups Gluten Free Pancake Mix
  • 3 Tbsp Sugar
  • 1/2 cup Unsalted Butter (softened)
  • 1 Tbsp Whole Caraway Seeds
  • 1 Egg beaten
  • 1 cup Buttermilk or Greek Yogurt
  • 1 cup Raisins (optional)

Instructions

  1. Preheat oven to 375°F. Grease an 8-inch casserole dish. Put aside 1 tablespoon of pancake mix.

    Sift together the pancake mix and sugar in large bowl and cut in butter until its like crumbs. Mix in caraway seeds, egg and buttermilk or yogurt. Add raisins and mix just until blended. Pour into prepared casserole pan. Gently smooth with a round top. Cut a shallow cross on top and dust with reserved tablespoon of mix. Bake for about 50 minutes. Cool for 10 minutes, turn out of pan to plate and serve, or let cool completely on a wire rack. Good warm or cold. Makes 16 servings.
