Jam Filled Skull Muffins

These frightfully delicious muffins, brought to us by Tony Shasteen, are filled with strawberry jam and baked in a skull-shaped muffin tin! When you pull them apart, they are full of “blood,” sure to delight fans of spooky baked goods.

Ingredients

  • 2 cups Gluten Free Pancake Mix (320 g)*
  • 4 Tbsp Butter, melted (56 g)
  • 2 Eggs
  • 1 ½ cups Milk (355 mL)
  • ½ cup Strawberry Preserves or Jam (144 g)
  • * For a cakier doughnut texture, add ¼ cup more pancake mix to the batter

Instructions

  1. Preheat oven to 350°F. Spray a six-cavity skull-shaped muffin pan with oil.
  2. In a large bowl, mix together pancake mix, melted butter, eggs and milk. Stir until just combined.
  3. Fill each muffin cup half full, scoop a tablespoon of strawberry jam into the center of each cup then evenly distribute the remaining pancake mix on top of the jam. Gently smooth the batter on top and bake for 20–25 minutes or until golden brown. Allow to cool 5 minutes in the pan and enjoy.
