These jumbo chocolate sandwich cookies are just like what you would get at a fancy bakery. Delicious chocolate cookies sandwiched together with a luscious vanilla frosting . . . yum! We went for an easy store-bought frosting here, but feel free to make your own. Also, these cookies get better with age. Make them the night before and let the frosted cookies sit overnight. They soften up beautifully, so the frosting won’t squish out.
Preheat the oven to 350°F. Line two large sheet pans with parchment paper.
In a large bowl, combine cake mix, oil and eggs. Mix well.
Using a ¼ cup scoop, place 12 cookies about an inch apart on the sheet pans. Gently press to flatten slightly. Do not press flat.
Bake 12-14 minutes, or until the cookies are cooked through and firm around the edges, rotating the pans halfway through.
Allow to cool for 15 minutes on the sheet pan, then place the cookies on a wire cooling rack to cool completely. Frost the cookies and sandwich them together.
