Keto tortillas require very few ingredients and you can pair them with any toppings that you have at home.   1. Whisk together almond flour, xanthan gum, baking powder and salt in a bowl. Add ½ cup water and whisk well, adding additional liquid as needed to reach a rollable consistency. Allow mixture to rest for 10 minutes.
  2. 2. Heat a large nonstick skillet over medium low heat. Lightly oil the pan. Using a ¼-cup scoop, measure out one scoop per tortilla. If you have a tortilla press, wrap the press in plastic wrap and place the measured tortilla dough onto the press. Press the tortilla firmly. Alternatively, if you don't have a press, place the tortilla dough between two pieces of plastic wrap and roll out to ⅛-inch thick.
  3. Place pressed dough in the preheated skillet. Cook for about 1 minute or until slightly browned. Using a spatula, flip the tortilla and cook on the second side until lightly browned, about 1 minute. Remove the tortilla and continue with the rest of the dough.
