Ingredients

  • 1/3 cup Organic Coconut Flour
  • 1 scoop Protein Powder *
  • 2 tsp Stevia Extract
  • 2 to 3 Tbsp Lemon's Zest
  • 1/4 cup Yogurt (Nonfat Greek)
  • 1/3 cup Organic Unbleached White All-Purpose Flour
  • 1 Tbsp Poppy Seeds
  • 1 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 1/2 cup Cottage Cheese low-fat
  • 6 Tbsp Applesauce unsweetened
  • 1-1/2 tsp Oil (coconut, olive, etc)
  • 3 Tbsp Lemon Juice
  • 1 Egg

Instructions

  1. Preheat oven to 325°F.
  2. Combine flours, protein powder, poppy seeds, baking powder, baking soda, stevia and lemon zest in a large mixing bowl until combined.
  3. In a blender, add Greek yogurt, cottage cheese, lemon juice, egg, oil and applesauce. Blend until just smooth.
  4. Pour blended ingredients into mixing bowl and stir until just combined. Pour into 8 muffin cases in a muffin tin.
  5. Bake for 25 minutes or until springy to the touch.
