Ingredients

  • 1-1/2 cups Almond Milk unsweetened
  • 1-1/2 cups Water
  • 1/2 tsp Sea Salt
  • 1-1/4 cups Steel Cut Oats or Organic Steel Cut Oats
  • 1/3 cup Chopped Walnuts
  • 1 Nutmeg to taste *
  • 1 Blueberries handful of fresh or frozen
  • 1 ground Cinnamon (added to taste) *
  • 1-1/2 tsp Vanilla Extract

Instructions

  1. Pour salt into saucepan. Add water and unsweetened almond milk. Turn on heat to medium to bring to low boil. When bubbles begin to appear, stir in the steel cut oats. Cover with a lid, leaving it slightly askew to prevent the milk and water from boiling over. Lower the heat. Set a timer for 10 minutes. Stir occasionally during this 10 minute period of cooking. When the timer goes off, add cinnamon and nutmeg to taste, about 1 1/2 tsp. vanilla* and approximately 1/3 cup chopped walnuts. Mix these ingredients into the oats. Replace the lid, again, slightly askew, and set the time for another 10 minutes, stirring occasionally. When the timer goes off, turn off the heat and remove the lid. Give the oatmeal a good stir. Rinse a handful of organic blueberries and stir them quickly into the oatmeal. The more a blueberry cooks, the more its nutrients break down and escape. Serve into 4 bowls, add almond milk as needed. *For a delightful change, use 1/2 tsp. pure lemon oil in place of the vanilla.
