This simple-yet-scrumptious Moroccan Couscous is a snap to make and so delicious. You can substitute the spices with 1 tablespoon Moroccan spice blend.
Heat olive oil in a pot over medium heat. Sauté onion and garlic until golden, about 4 minutes.
Once onion and garlic are golden, add tomato paste and all the spices. Sauté together, allowing the tomato to caramelize, about 3 minutes. Toss in the raisins and broth. Bring to a boil.
Add couscous and stir until well mixed. Take the couscous off the burner, cover and let cook for 5 minutes off the heat.
Use a fork to fluff the grain and add the salt, slivered almonds and minced parsley.
