Line a 9 x 13-inch pan with wax paper and set aside.
In a medium saucepan, combine sugar, molasses (or honey) and salt. Bring to a boil over high heat; stir in peanut butter and remove from heat. Stir in vanilla and other ingredients.
Allow to cool slightly before handling.
Pour into prepared pan and refrigerate for 30 minutes.
Cut into bars and refrigerate for 30 more minutes.
