This Oatmeal Peanut Butter Chocolate Chip Skillet Cookie is easy to put together and great for sharing! A perfect recipe for your next cookie craving!

Whip together the butter and sugars in a standing mixer with the paddle attachment on high speed until it becomes light and fluffy, about 5 to 7 minutes.
Add in 1 egg at a time into the butter mixture until it is completely combined and then pour in the vanilla. Scrape the sides of the bowl after adding eggs.
Mix the flour, baking soda and salt with a whisk in a medium size bowl and then slowly add it to the butter mixture. Stop the mixer to scrape to combine all of the ingredients.
Next, Fold in the oats, chocolate chips and peanut butter chips into the bowl until it’s combined.
Transfer the mixture to a 10-inch cast iron skillet sprayed with non-stick spray and press down to form to the pan.
Bake the skillet cookie for 25-28 minutes, or until the edges of the cookie are lightly browned and the center is slightly soft.
Serve the cookie with optional vanilla ice cream and chocolate sauce.
