Ingredients

  • 1-1/2 cups Bob's Red Mill Whole Wheat Pastry Flour
  • 3/4 cup Date Sugar
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 cup Coconut Oil melted
  • 1/4 cup Honey
  • 1/4 cup Applesauce
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 1-1/2 cup Bob’s Red Mill Regular Rolled Oats
  • 1 cup Raisins

Instructions

  1. Preheat oven to 350°F. Line two baking sheets with parchment paper.
  2. In a small bowl, combine the Bob’s Red Mill Whole Wheat Pastry Flour, Date Sugar, baking powder, baking soda and salt and set aside.
  3. In the bowl of a mixer fitted with the paddle attachment or by hand with a spoon, mix the melted coconut oil, honey, applesauce, egg and vanilla extract until smooth.
  4. Add the dry ingredients and mix until just combined. Add the Bob’s Red Mill Regular Rolled Oats and raisins and mix until evenly combined.
  5. Scoop cookies, about 2 Tbsp each, onto prepared cookie sheets leaving about ½ -inch between each. Flatten each cookie by hand.
  6. Bake cookies until light golden brown around the edges, about 13 – 15 minutes, rotating halfway through baking time. Let cool on a cooling rack before serving.
