Cook the wheat berries and kamut berries in separate pans to keep each berry flavor distinct. Bring 2 cups of water and 2/3 cup of Organic Hard Red Wheat Berries to a rolling boil, turn heat down, cover and simmer for 1 hour. Drain excess liquid. Bring 1 cup of water and 1/3 cup of Organic Kamut® Berries to a rolling boil, turn heat down, cover and simmer for 1 hour. Drain excess liquid.
After the berries have been simmering for 1/2 hour, preheat the oven to 375°F. Toast the rolled oats, pumpkin seeds, sunflower seeds and walnut pieces in the preheated oven for 15 minutes. Toss the mix every 5 minutes so as not to burn.
In a small saucepan over low heat, melt the butter. Stir in the honey or maple syrup. Remove from heat. Do not let the mixture boil.
Mix all dry ingredients thoroughly, including the toasted items. Add the fruit and cooked berries and mix well. Add the applesauce and butter mixture. Mix well. If needed, add more applesauce. The mix should hold together, not fall apart.
Line a baking sheet with aluminum foil. Pour the mix into the pan and pat to the full length and width of your baking sheet. Bake for 15-20 minutes, or until bars begin to turn golden.
Immediately upon removing cooking sheet from oven: use a pizza cutter to cut into bars. Let cool. Package each separately and refrigerate.
