Instructions
Preheat oven to 350°F and set aside a baking sheet.
In a small bowl, combine Paleo Baking Flour, baking soda and salt. In a large bowl, whisk together eggs, water and oil. Add flour blend and mix thoroughly. Let rest for 5 minutes.
Portion mixture into four even portions and place on oiled parchment paper; cover with a second piece of oiled parchment. Flatten and shape mixture between the oiled parchment paper. Remove and discard top piece of parchment and slide bottom parchment and flatbreads onto the baking sheet.
Bake for 12–15 minutes. Carefully remove from parchment paper and let cool on a wire rack.
To prepare sandwiches, spread paleo mayo on one side of cooled flatbread. Add bacon, lettuce and tomato, then top with a second flatbread.
