This delightful Paleo Cake is simple yet scrumptious. It can be personalized a million ways: choose your favorite filling and frosting and make it your own.
Preheat oven to 325°F. Line the bottom of an 8-inch round cake pan with parchment paper and spray sides with pan spray.
In a small bowl, combine Paleo Baking Flour, baking soda and salt. In a large bowl, whisk together eggs, coconut oil, honey or maple syrup, and vanilla extract. Add dry ingredients and whisk thoroughly.
Transfer mixture to the prepared cake pan and smooth evenly. Bake until a toothpick inserted in the center of the cakes comes out clean, about 30–35 minutes.
Let cool before decorating or slicing. Makes one 8-inch round cake.
