These sweet and tender pumpkin pancakes are made with Paleo Pancake & Waffle mix, pumpkin puree and pumpkin spice. Welcome fall (and winter) with these warm off the stove with whipped cream and maple syrup.
Preheat lightly oiled griddle or non-stick skillet over medium heat.
In a large bowl, whisk together all ingredients until smooth. Portion ¼ cup batter per pancake onto a preheated griddle and cook until the edges begin to set, about 3-4 minutes. Flip and cook until golden brown.
