Ingredients

  • 1 Tbsp Canola Oil
  • 1/4 cup Brown Rice Flour
  • 1 tsp Baking Powder
  • 1/2 tsp Sea Salt
  • 2 Eggs large
  • 2 Tbsp Potato Flour
  • 1/2 tsp Baking Soda
  • 1 tsp Vanilla Extract
  • 1/2 cup Yogurt (plain lowfat)
  • 2 Tbsp Tapioca Flour
  • 1 tsp Sugar or Honey

Instructions

  1. Blend eggs and yogurt (or milk) in blender or whisk vigorously in bowl. Add remaining ingredients and thoroughly blend.



    Over medium heat, place large, nonstick skillet that has been lightly coated with nonstick spray. Pour batter into skillet and cook until tops are bubbly (3-5 minutes). Turn and cook until golden brown (2-3 minutes).



    Makes 4 pancakes.
