In a medium bowl or liquid measuring cup, whisk together coconut milk, whey protein, yogurt, honey and lemon zest until smooth.
Fill popsicle molds with fresh berries, alternating between layers of blueberries and raspberries. Fill each mold almost to the top with berries but take care not to pack them in--leave lots of open space.
Pour the protein mixture over the berries in each mold, gently tapping the molds to release any air bubbles. Add enough liquid to reach the fill lines indicated on the molds.
Insert a popsicle stick halfway into each mold, or attach an accompanying lid if supplied. Freeze at least 4 hours.
Rinse gently under warm water to loosen, then remove each popsicle from its mold to serve.
