This delicious, single-serving dessert is bursting with juicy peaches and satisfying protein! Make it in the microwave for a sweet treat in less than 10 minutes.

diced fresh or frozen Peaches, thawed

Instructions
Whisk together protein powder, sweetener, baking powder, egg, apple cider vinegar and vanilla or almond extract in a bowl.
Place half of the peaches in the bottom of a microwave-safe 10 oz mug or small bowl, then pour the batter over and top with remaining peaches.
Microwave 2–2 ½ minutes. The cake should spring back when touched. You can also insert a toothpick in the center to see if it comes out clean. Serve with vanilla ice cream for a special treat!
