These lovely cupcakes are perfect for spring, or if your'e just waiting for spring to arrive for good! They're easy to make and a great addition to your Easter or Mother's Day menu, or any time you're craving a peachy treat.

Peach
peeled and pitted, about 1/4-1/3 cup pureed
1 tsp
Vanilla Extract
2-3 drops
Yellow Food Coloring
Instructions
Preheat the oven to 350°F. Place cupcake liners in a tin and set aside.
In a medium bowl, mix the flour, baking soda, sugar and cornstarch and set aside.
In a food processor, add the peeled, pitted peaches and puree.
In a mixer bowl, add applesauce, egg, vanilla, water and peach puree and beat until smooth.
Add the flour mixture and beat for 2 minutes. Add the pink food coloring and beat until mixed in.
Fill each cupcake liner 2/3 full and bake for 18 minutes.
Let cupcakes cool before frosting.
For the Frosting
In a large bowl, beat the butter until creamy.
Meanwhile, in a food processor, add the peeled, pitted peach and puree.
Add the powdered sugar, vanilla and pureed peach and mix. Add a couple drops of yellow food coloring and mix until combined. (If necessary, add a little more powdered sugar until the frosting reaches your desired consistency)
