Pizzelles (gluten-free)

The flavor possibilities are endless with this recipe. Use whatever flavored chip you wish. I used chocolate and salted caramel on these. I also used peanuts, but really any nut would work or sprinkles are fun too!

Ingredients

  • 1 1/2 cups Gluten Free 1-to-1 Baking Flour
  • 2 1/2 tsp Baking Powder
  • 3 Tbsp Turbinado Sugar
  • 10 drops Vanilla Stevia
  • 2 Eggs
  • 3 Tbsp Dairy-Free Butter (or Butter) melted and cooled
  • 1/2 cup Cashew Milk
  • Ice Cream
  • Chocolate Chips and Nuts for garnish

Instructions

  1. Mix it all together and then cook according to the directions for your machine.
  2. To assemble ice cream sandwiches, allow the ice cream to soften slightly. Scoop ice cream onto the cookie, place another cookie on the top and gently press to sandwich together. Place on a cookie sheet and put the sandwiches into the freezer. You will have to work in batches so the ice cream doesn’t melt.
  3. Once the sandwiches are frozen solid, melt chocolate chips in the microwave stirring every 30 seconds until melted. Allow to cool slightly. Chop nuts and place in a bowl. Working with one sandwich at a time, coat outside of each with chocolate and nuts. Place on a parchment lined cookie sheet and freeze until set. If not serving right soon, wrap each cookie individually and keep in the freezer.
