An easy breakfast or quick treat, this paleo protein blueberry mug cake is the perfect recipe when you are short on time. Soft, fluffy and incredibly delicious, you would never know this cake was “baked” in the microwave!
Whisk protein powder, sweetener, baking powder, egg, apple cider vinegar and vanilla or almond extract in a microwave safe mug or small bowl. Stir in blueberries. Microwave 1 ½-2 minutes. The cake should spring back when touched. You can also insert a toothpick in the center to see if it comes out clean.
