In a skillet, combine Steel Cut Oats, pumpkin seeds, and salt. Over low heat, toast until slightly browned. Remove. Sprinkle over the bars. Cut immediately and serve. Enjoy!

Oat Bars
Prepare a 9x9 pan by spraying the inside with cooking spray. Set aside.
Combine the water, milk, brown sugar and pumpkin pie spice in a saucepan over high heat. Bring to a boil.
Add steel cut oats and turn the heat to medium, stirring well. After 15-20 minutes, once the oats are creamy, add pumpkin pie filling and mix in. Freeze bars for 10 minutes (until set).
