Ingredients

Crunchy Topping
Oat Bars
  • 2 cups Water
  • 2 cups Skim Milk
  • 1/2 cup Brown Sugar
  • 2 Tbsp Pumpkin Pie Spice
  • 1-1/4 cups Steel Cut Oats or Organic Steel Cut Oats*
  • 15 oz Pumpkin Pie Filling canned

Instructions

Crunchy Topping
  1. In a skillet, combine Steel Cut Oats, pumpkin seeds, and salt. Over low heat, toast until slightly browned. Remove. Sprinkle over the bars. Cut immediately and serve. Enjoy!



    Serves 8.
Oat Bars
  1. Prepare a 9x9 pan by spraying the inside with cooking spray. Set aside.
  2. Combine the water, milk, brown sugar and pumpkin pie spice in a saucepan over high heat. Bring to a boil.
  3. Add steel cut oats and turn the heat to medium, stirring well. After 15-20 minutes, once the oats are creamy, add pumpkin pie filling and mix in. Freeze bars for 10 minutes (until set).
  4. Meanwhile make the crunchy topping.
