Preheat oven to 350°F. Spray a 13 x 9-inch baking dish and line with parchment paper.
Mix together oats, wheat germ, sunflower seeds, flaxseed meal, peanuts and almonds. Spread mixture evenly in a large, flat roasting pan. Toast in the oven for approximately 10 minutes, stirring every few minutes to avoid burning. Remove from oven and allow to cool. Mix in cinnamon.
In a large saucepot combine butter, honey, brown sugar, vanilla extract, almond extract and salt. Heat on medium, stirring frequently until mixture starts to bubble.
Thoroughly mix dry and wet mixtures together with a large spoon. Sprinkle in dried fruit and continue to stir.
Carefully spread the mixture in the prepared baking dish. Press the mixture with oiled hands evenly into the bottom of the pan. Let the mixture harden at least a few hours before cutting.
To serve, turn pan upside down onto a cutting board and cut into serving-sized pieces. Enjoy!
