Ingredients

  • 1 cup Shredded Carrots
  • 1/3 cup Almond Protein Powder
  • 1/4 cup Almond Butter
  • 1/3 cup Pecans
  • 1/2 cup soft Dates
  • 1/2 tsp Cinnamon
  • 1/4 tsp Ginger
  • Pinch Nutmeg and Cloves
  • 1/2 tsp Sea Salt
  • 1 Tbsp Coconut Oil
  • 1/4 tsp Vanilla
  • 1 cup Old Country Style Muesli

Instructions

  1. In a food processor, combine all ingredients except the muesli and blend together until a sticky dough forms.
  2. Measure 1 cup of muesli in a medium bowl, then add the carrot mixture. Using your hands, mix together the muesli and carrot mixture.
  3. Once your dough is well mixed, take about 1 tablespoon of the mixture and roll it into a ball. Place on a plate or baking sheet, and then finish rolling the rest of the dough out. Refrigerate for 1 hour, then enjoy!
