Sweet Breakfast Tabouli

Tabouli is a Middle Eastern chilled salad in which bulgur (a form of cracked whole-grain wheat) is dressed in olive oil, mint, parsley, garlic and lots of tomatoes and cucumbers. This fruity version takes very little time to prepare and puts a twist on the mint and lemon flavors by making it sweet instead of savory.

Ingredients

  • 2 Tbsp honey
  • 1/2 cup Dried Sweet Cherries or other fruit
  • 1/2 cup Bulgur
  • 1 Tbsp Mint dried flakes
  • 2 Tbsp Lemon Juice
  • 1 cup Water (boiling hot)

Instructions

  1. In a small casserole with tight-fitting lid, mix cherries and mint.



    In a small saucepan, bring water to a boil and add bulgur. Return to a boil, then dump into cherry mixture and tightly cover. Let stand to steam for 10 minutes. Chill for later use, or use warm.



    In a small cup, stir together lemon and honey. Drizzle over bulgur and fluff to mix. Eat cold in summer, warm in winter.



    Makes 2 servings.
