Sweet Corn Spoon Bread Pudding

Ingredients

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl whisk together the eggs, butter, sour cream, whipping cream, baking powder, flour, cornmeal and salt until combined.
  3. Next fold in the corn, 1 cup of cheddar cheese and sugar until combined.
  4. Transfer the mixture to a 10-inch cast iron skillet that has been greased and top of with remaining 1/2 cup of shredded cheddar cheese.
  5. Bake for 30-35 minutes or until lightly browned around the outside edges and firm in the center.
  6. Garnish with chopped green onions and parsley.
