Sweet potato and adzuki bean soup is an easy one-pot meal that is perfect for a detox night.  The addition of miso adds a sumptuous and complex note to this clean and healthy dish.  Prepare it on the stove top or in the Philips Multi Cooker.

Ingredients

  • 2 cups Cubed Sweet Potatoes
  • 1 cup Adzuki Beans
  • 2 tsp Minced Fresh Garlic
  • 1 tsp Minced Fresh Ginger
  • 6 cups Water
  • 4 cups Shredded Mustard Greens or Kale or Collard Greens
  • 2 Tbsp Red Miso Paste
  • 2 tsp Tamari or Soy Sauce

Instructions

  1. Place sweet potatoes, adzuki beans, garlic, ginger, and water in the cook pot of a Philips Multi Cooker. Set to Soup/Stew for 90 minutes and beginning cooking.
  2. When there is 5 minutes of cook time remaining, add shredded mustard greens then close lid and continue to cook for the remaining 5 minutes.
  3. When cooking cycle has finished, dissolve miso paste in a small bowl with a little bit of hot soup broth. Add miso mixture and soy sauce to the soup, stir well and serve.
