Ingredients
Spice Rub
1 tsp
Brown Sugar
or Coconut Sugar
1 tsp
Kosher Salt
3/4 tsp
whole Mustard Seeds
or 1/2 tsp ground Mustard
3/4 tsp
whole Fennel Seeds
or 1/2 tsp ground Fennel
1/4 tsp
Ground Ginger
1/8 tsp
Cayenne Pepper
Salmon
1 lb
Salmon Fillets
or other protein
Instructions
If using whole mustard and/or fennel seeds, lightly toast the seeds in a small skillet over medium heat until fragrant, 2-3 minutes. Let cool completely, then coarsely grind in a clean spice/coffee grinder or with a mortar and pestle.
In a small bowl, combine sugar, salt and spices. Rub entire spice mixture over the flesh side of each salmon piece. Wrap in plastic and chill for 1 hour. Cook according to your favorite recipe.
