Tabbouleh

This traditional Middle Eastern dish relies heavily on bulgur and parsley. A great way to use up that parsley bunch you picked up from the market! This recipe can be found on our bags of Bulgur.

Ingredients

  • 1 cup Bulgur
  • 1 cup Boiling Water
  • 3 cups Parsley finely chopped
  • 1/4 cup Mint finely chopped
  • 1/4 cup Scallions finely minced
  • 2 Tomatoes medium, seeded and diced
  • 1 Cucumber medium, seeded and diced
  • 1/2 tsp Salt
  • 1/4 tsp Ground Cumin
  • 1/4 tsp Ground Black Pepper
  • 3 Tbsp Lemon Juice
  • 3 Tbsp Olive Oil

Instructions

  1. Combine bulgur and boiling water and let soak for 1 hour. Drain well and squeeze out any excess water.
  2. In a large bowl, combine drained bulgur, parsley, mint, scallions, tomatoes, cucumber, salt, cumin, black pepper and lemon juice. Chill for 1 hour.
  3. Immediately before serving, add olive oil and toss well.
