These ultra-rich brownie cookies taste (and look) like a high-end bakery treat, but you can easily bake them in an afternoon thanks to our Signature Blends Fudgy Brownie Mix. Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
In a large bowl, combine brownie mix, eggs and oil. Whisk together until a thick batter forms, then fold in the semi-sweet chocolate chips with a silicone spatula until combined, about 30 seconds.
Use a large cookie scoop (about 3 tablespoons), scoop five cookies onto prepared baking sheet. Bake for 18–20 minutes, rotating pan halfway through.
Use a circular object (like a glass or small bowl) to swivel around the cookie to give it that perfect circular shape. Cool on the baking sheet for 10 minutes, then cool completely on a wire rack.
Repeat until all the cookie dough is used.
When cookies are cooled, melt semi-sweet chocolate in a large bowl. Once melted, whisk in the oil until shiny and combined.
Dip the bottoms of the cookies in chocolate and place on a wire rack, face down, to set for 20–30 minutes (you can also freeze for 10 minutes). Top with flaky sea salt.
