Vanilla Seed High Protein Granola

Ingredients

  • 1/2 cup Organic Pumpkin Seeds
  • 1/2 cup Premium Shelled Sunflower Seeds
  • 1/4 cup Dried Cranberries
  • 1/4 cup Agave Nectar use Honey or Maple Syrup if preferred
  • 1/2 cup Almond Protein Powder
  • 2 Tbsp Flaxseed
  • 1 Tbsp Hot Water
  • 1/4 tsp Salt
  • 1 tsp Lemon Extract or zest of one lemon
  • 1/4 tsp Vanilla Extract

Instructions

  1. Pre-heat oven to 350°F.
  2. In a large bowl mix together agave nectar, protein powder and salt until well blended.
  3. In a separate, small container mix in hot water with flaxseed, let sit for 1-2 minutes (this helps it to gel).
  4. Add all remaining ingredients including flaxseed and mix until thoroughly combined, it should be pretty sticky at this point.
  5. Place mix directly on a baking sheet, spreading carefully to keep larger pieces together.
  6. Bake for 15 minutes stirring very well half way through.
  7. Bake until golden brown adding on in 5 minutes intervals until it's reached the desired crunchiness for your taste.
