These delicious oats are gluten free and vegan! Organic Extra Thick Rolled Oats are mixed with bananas, cinnamon, berries and more, then baked until done. Garnish with nut butter, if desired! Recipe courtesy of Malcolm Regisford.
1-1 ½ cups
Fruit of choice (strawberries, blueberries, banana, etc.)
Additional Fruit and/or Nuts for garnish
Instructions
Preheat oven to 350ºF. Lightly oil an 8 x 8-inch baking dish and set aside.
Whisk flaxseed meal and water in a large bowl and let thicken for 3-5 minutes. Add bananas, mashing thoroughly, then add milk, cinnamon, vanilla, baking powder and salt, mixing until combined.
Stir in oats and seeds, then gently fold in fruit of choice. Pour into prepared baking pan, top with additional fresh fruit and/or nuts, and bake for 35-40 minutes. Let cool and enjoy.
