Vegan Cashew and Coconut Oil Granola

This coconut oil granola is healthy, vegan and uses only natural agave syrup and molasses for added sweetness. Ingredients

  • 3 cups Old Fashioned Rolled Oats or Gluten Free Rolled Oats
  • 1/2 cup Cashew Pieces
  • 1/2 cup Almond Protein Powder
  • 1/2 cup Coconut Oil unrefined, melted
  • 1/2 cup Coconut Flakes
  • 1/2 cup Dried Apricots chopped
  • 1/3 cup Agave Syrup or honey or maple syrup
  • 1/4 cup Premium Shelled Sunflower Seeds
  • 1/4 cup Cocoa Nibs
  • 2 Tbsp Molasses
  • 1/4 tsp Vanilla Extract
  • Sea Salt to taste

Instructions

  1. Preheat oven to 350°F. Combine all ingredients except salt in a large bowl. Stir until well combined.
  2. Evenly spread granola mixture onto a rimmed, parchment-lined baking sheet. Lightly sprinkle with sea salt.
  3. Bake 6 minutes, then stir and bake 6 minutes more or until lightly browned. Remove from oven and cool completely.
  4. Granola will harden once cooled. Break up and store in a jar or airtight container.
