Vegan Chocolate Pudding

This thick, luscious pudding is made with simple pantry ingredients and so easy to make. Put it together whenever you need a sweet treat. There's a sugar free option as well!

Ingredients

  • 3 cups Dairy-Free Milk (720 mL)
  • ⅔ cup Cane Sugar or Monk Fruit Sweetener (149 g)
  • ⅓ cup Cornstarch (40 g)
  • ⅓ cup Cocoa Powder (Dutch Process for dark chocolate) (30 g)
  • ¼ tsp Salt
  • 2 Tbsp Dairy-Free Butter (28 g)
  • 1 tsp Vanilla Extract

Instructions

  1. In a medium pot, combine milk, sugar, cornstarch, cocoa powder and salt. Whisk well to combine. Heat mixture over medium heat, whisking constantly until the mixture thickens to a soft pudding stage. Remove from heat. Add butter and vanilla extract and whisk well to combine. Pour into a serving bowl or individual ramekins and cover with plastic wrap, making sure to place it directly on the surface of the pudding to prevent a skin from forming.
  2. Chill for 2 hours, then serve!
