Vegan Pumpkin Chocolate Chip Cookies

Ingredients

Instructions

  1. Preheat the oven to 350°F.
  2. Combine the pumpkin, oil, applesauce and sugar until mixed. Stir in the vanilla.
  3. Slowly add in the flour, baking soda, baking powder, salt, cinnamon and ginger.
  4. Stir until just mixed.
  5. Stir in the chocolate chips.
  6. Drop spoonfuls onto a cookie sheet and bake for 8-10 minutes.
  7. Once the cookies are baked, take them out of the oven and immediately transfer onto a plate or cooling rack.
