Wow everyone at your next backyard gathering with this incredibly flavorful, fresh salad. Hearty, satisfying farro provides chewiness, while cubed watermelon, salty feta and refreshing mint combine to create the perfect bite with every forkful. Excellent alongside grilled meat or fish.

crumbled Feta Cheese, plus extra for garnish

roughly chopped Mint Leaves, plus extra for garnish
White Wine Vinaigrette
¼ cup
White Wine Vinegar
1 Tbsp
Lemon Juice
2–3 tsp
Honey
¼ tsp
Kosher Salt, plus more to taste
¼ cup
Extra Virgin Olive Oil
Instructions
Fill a pot with 8 cups of water and 1 teaspoon salt and bring to a boil. Add farro and let boil uncovered until soft, about 30 minutes. Drain farro, then spread on a baking sheet to cool.
For the vinaigrette, add vinegar, lemon juice, honey, salt and olive oil to a jar, seal, and shake vigorously until combined. Taste and add additional honey or salt as needed.
Place sliced red onion in a small dish and drizzle with red wine vinegar, tossing a few times to coat. Let marinate for a minimum of 15 minutes.
To a large bowl add cooled farro and cubed watermelon. Remove onions from the red wine vinegar and add, along with feta cheese and mint.
Drizzle with about half of the dressing and toss until evenly coated. Taste and add a few pinches of salt or additional dressing as desired. Garnish with extra feta and mint and serve right away.
