Ingredients
Vinaigrette Dressing
1/2 cup
Olive Oil
or Canola Oil
2 Tbsp
Lemon Juice
or Lime Juice
2 Tbsp
White Wine Vinegar
2 Tbsp
chopped Parsley
1 Tbsp
Honey Mustard
2 Tbsp
minced Shallots
1/4 tsp
Sea Salt
1/4 tsp
Ground Black Pepper
Salad
1 cup
Hard Red Wheat Berries
cooked
1 cup
cooked White Beans
1/2 cup
Green Onion
chopped
1/2 cup
Celery
sliced
1/2 cup
Tomato
diced
Instructions
Mix the vinaigrette by combining all the ingredients with a whisk or in a blender. Pour over the salad ingredients and mix well. Let chill overnight or for several hours to let the flavors blend. Serves 8.
