Ingredients

Vinaigrette Dressing
  • 1/2 cup Olive Oil or Canola Oil
  • 2 Tbsp Lemon Juice or Lime Juice
  • 2 Tbsp White Wine Vinegar
  • 2 Tbsp chopped Parsley
  • 1 Tbsp Honey Mustard
  • 2 Tbsp minced Shallots
  • 1/4 tsp Sea Salt
  • 1/4 tsp Ground Black Pepper
Salad
  • 1 cup Hard Red Wheat Berries cooked
  • 1 cup cooked White Beans
  • 1/2 cup Green Onion chopped
  • 1/2 cup Celery sliced
  • 1/2 cup Tomato diced

Instructions

  1. Mix the vinaigrette by combining all the ingredients with a whisk or in a blender. Pour over the salad ingredients and mix well. Let chill overnight or for several hours to let the flavors blend. Serves 8.
