Ingredients

  • 3 cups Scottish Oatmeal or Organic Scottish Oatmeal (432 g)
  • 2 cups 5 Grain Rolled Cereal (230 g)
  • 1 cup Cane Sugar (200 g)
  • 1 cup Whole Wheat Pastry Flour or Organic Whole Wheat Pastry Flour (128 g)
  • 1 cup Shredded Coconut (80 g)
  • ¼ cup Flaxseed Meal (25 g)
  • 2 tsp Baking Powder (10 g)
  • 1 tsp Salt (6 g)
  • 1 cup Chocolate Chips (224 g)
  • 1 cup Cranberries (120 g)
  • 3 cups Water (720 mL)
  • 1 cup Oil (240 mL)
  • 2 Tbsp Vanilla Extract (30 mL)

Instructions

  1. Preheat oven to 375°F. Line one half-sheet tray with parchment paper.
  2. In a large bowl, thoroughly combine Bob’s Red Mill Scottish Oatmeal, 5 Grain Rolled Cereal, cane sugar, Whole Wheat Pastry Flour, coconut, Flaxseed Meal, baking powder and salt. Add chocolate chips and dried cranberries and mix well.
  3. In a separate bowl, whisk water, oil and vanilla extract. Add to dry ingredients and mix well to thoroughly combine.
  4. Spread mixture evenly into prepared sheet tray. Bake until set and slightly golden on top, 25-30 minutes.
  5. Let cool completely, then portion into bars. Wrap well to store.
