I often tell people to try coconut flour with a tried and true recipe first, before setting off into unexplored territory. Coconut flour is not cheap and can be very temperamental. A bad experience with it will be enough to turn most of us off. Coconut flour is a wonderful ingredient, though, and is worthy of a home in your kitchen. How to Cook with Coconut Flour

Coconut flour is extremely high in fiber, which means it absorbs a lot of liquid during baking. This makes it critical to follow the recipe exactly without making additional substitutions. Dough will often be much thicker than expected when baking with coconut flour. Don't worry too much, just keep going. A quick rule of thumb is to swap about 1/4 to 1/3 cup coconut flour for 1 cup of regular flour. Due to its high absorbency, you’ll also want to increase the number of eggs.     I tried making a roux with the coconut flour and coconut oil. I tried it twice and both times the roux was very grainy and a total flop. It might be fine for baking but for a roux for a gumbo don't even try it.

      Hi Mary Jane - we don't have a pie crust recipe that specifically uses Coconut Flour, but here are some other great options.

      Well for every 1 cup of flour, you're supposed to use 1/4- 1/3 cup coconut flour. So use 1/2- 2/3 cup coconut flour in place of 2 cups regular flour. Add 2 more eggs. Boom. Math.

    Hi, I’m not a fan of baked goods with almond flour & coconut flour. Do you know if I substitute the coconut flour with all purpose flour it will turn out okay? If so, would the amounts of other ingredients have to change?

      Hi Melissa, we recommend searching online for some recipes that would work for you or exploring bobsredmill.com for recipe inspiration. We have not tried that recipe with regular flour so we cannot advise how much to use. We have many recipes on our website without almond or coconut flour.
