Breakfast Cookies Make Back-to-School Simple & Delicious

Cookies for breakfast? They may sound indulgent, but choosing a breakfast cookie recipe packed with protein, fiber and healthy fats can be a convenient—and delicious—back-to-school breakfast. If your child is tired of breakfast cereal, breakfast cookies are perfect to put in little hands before rushing off to the bus stop, and make a great after school snack as well! You may even pack a few to enjoy at the office with a cup of hot coffee.

Our recipe for Healthy Breakfast Cookies with Oats and Peanut Butter calls for a combination of gluten free whole grain oats, organic chia seeds and flaxseeds for protein, fiber and omega-3 fatty acids. Mashed sweet potatoes and peanut butter add vitamin A and extra protein, while maple syrup and vegan chocolate chips add sweetness. These vegan, gluten free breakfast cookies can be stored in an airtight container for five days, but there's a good chance they'll be eaten before then!
