Muffins
- 1/4 cup Extra Virgin Coconut Oil
- 2/3 cup Sugar
- 1 Egg
- 1/2 cup Buttermilk
- 1/2 tsp Vanilla Extract
- 1 cup Bob’s Red Mill® Whole Wheat Pastry Flour
- 1/4 cup Bob’s Red Mill® Organic Coconut Flour
- 3/4 tsp Baking Powder
- 1/4 tsp Baking Soda
- 1/8 tsp Sea Salt
- 1 1/2 cups Blueberries divided
Topping
- 1/4 cup Pecans finely chopped
- 1/4 cup Whole Wheat Pastry Flour
- 1/4 cup Organic Coconut Flour
- 1/4 cup Sugar
- 2 Tbsp Melted Unsalted Butter
Instructions
- Heat oven to 425°F.
- Prepare a 12-cup muffin tin by spraying it with non cooking spray or lining it with paper cups.
- In a large bowl, whisk together sugar and oil.
- Add egg, milk and vanilla to the oil combination and whisk until smooth.
- In a small bowl, combine flour, baking soda, baking powder and salt.
- Gently stir ¾ cup of blueberries into dry ingredients.
- Combine dry ingredients with wet ingredients, mixing just until combined.
- Spoon the batter into your prepared muffin pan, using about ¼ cup of batter for each muffin.
- Drop the remaining blueberries onto the tops of the muffins and push them into the batter slightly.
- In a small bowl, combine the pecan topping ingredients with a fork.
- Sprinkle the topping over the muffin tops.
- Place muffins into the oven and reduce the heat to 350°F.
- Bake muffins for about 20 minutes, checking on them periodically.
- Once muffins have begun to brown or a toothpick can be inserted into the center and come out clean, they are thoroughly cooked.
