This article is deceptive. You lure people in with that top picture of those amazing cookies, but no! Those aren't gluten-free! You don't give THAT recipe! You didn't have to do that. You could've used the picture of the pfeffernusse or truffles or dogs. The deceit makes me not trust that these recipes will be good.

This message is for Penny who has a 3-year old grandson who loves cookies. I have this recipe I make for a friend who is diabetic. All there is are 3 ingredients. Mash 2 ripe bananas, add 1 cup quick-cooking oats, stir in 1/4 cups chopped walnuts or whatever nuts you want. Drop mounds on greased baking sheet or on parchment paper, flatten and cook in 350 deg oven for 12 to 15 min. I love them as they are healthy for me.

I have a basic gluten/lactose free cookie recipe with 3 ingredients. From this basic recipe many different cookies can be made.
    The 3 basic ingredients
    1 c peanut butter
3/4 c - 1 c (depending on sweet tooth) sugar (white or brown works well.)
    1 egg
    1 tsp of vanilla (optional)
Optional add ins - 1/2 c to 3/4 c each of any of the following or all:
rolled oats (not instant), chocolate chips (lactose-free if needed), crushed mixed nuts, coconut, raisins or any other tasty add in.
(I like the rolled oats, chocolate chips and nuts the best)
1 Tbs balls pressed down or put in mni muffin tins
360 F for 11 min. DO NOT OVER COOK
    makes 18 - 24 cookies.

Comment about rice flour being an excellent source of protein is not an honest assessment of the health benefit of that ingredient. Rice four is high in carbs, calories and is very high on the glycemic index! Protein is relatively low. Only 9 grams in a cup of rice flour. Most GF foods made with rice flour are unhealthy and very high in calories. Those in need of GF diet are better off to avoid rice flour, except for a (very) rare treat. Most who follow a GF diet know this...or should. Most Cookie recipes are not meant to be healthy. They are a treat...like a candy bar. Who on a regular diet would say ...a candy bar is healthy!?

Nobody claimed that they were healthy. But you understand that there are children who can't participate in holiday parties and Christmas baking because they are gluten free. What are you going to do, hand them a stick of celery on Christmas day?

Jo Ann — I have used the Baker's Chocolate One Bowl Brownie recipe on the box. I have substituted Bob's Gluten-Free 1-to-1 Baking Flour for the flour in the recipe. I don't eat gluten-free, but I make these when my friend who does is coming. She is so happy that she can eat brownies with the rest of us and everybody eats them up!

Gluten free sounds great, but ALL grains have a form of gluten. Its the nature of the beast. Seeds of grasses have protein glutens not easily digested by humans.
    FYI google Dr David Perlmutter.

Gluten sensitivity is more than likely to all glutens.
